The question is usually asked as a choice and it is really a sequence. Binoculars find animals. A spotting scope judges them. The useful question is which of those two jobs is currently limiting you.
Why binoculars find better
- Field of view. A 10x42 publishes 341 ft at 1,000 yards; an 85 mm scope at 20x covers about 2.1 degrees, which is far narrower. Searching with a scope is like reading a page through a toilet roll.
- Two eyes. Binocular vision resolves low-contrast shapes better than one eye, because your brain combines two images. A bedded gray-brown animal in gray-brown sage is exactly a low-contrast problem.
- Fatigue. Glassing for an hour through one eye is tiring in a way that compounds across a day.
- Speed. They come up and go down in a second. A scope has to be set up.
Why a scope judges better
Resolution. At 55x with good glass you can count points on a bull at a mile; with 10x binoculars you can tell that it is a bull. When the question is "is this animal worth a four-hour stalk across a canyon", that difference is the whole decision.
